Hi my name is John Tsahiridis (Cha-he-re-dis). I grew up in a small town in Northern Greece with two wonderful Greek parents. When I was 16, my father got me a job as a busser at a Greek restaurant. I learned quickly and enjoyed it so much that I never looked back! After more than 35 years of experience in the restaurant industry and a passion for great food and hospitality, Greek Belly opened its doors in July 2018. We offer a fresh take on authentic, from-scratch Greek street food right here in Springfield. Many of our recipes come from my mother, passed down through many generations! We import numerous ingredients directly from Greece, including extra virgin olive oil, feta cheese, red wine vinegar, oregano, sea salt, and more.
You won't find Chicago-style ground beef or lamb gyros here!
Why? Because in Greece, gyros are prepared with hand-sliced and stacked whole muscle meats! Rotisserie pork or rotisserie chicken are the most common choices. No MSG or fillers are used - only natural seasonings and marinades. And yes, we do include fries inside our gyros and pita wraps. Why? It's a Greek street food tradition!
