Ingredients:

  1. 1 cup Greek yogurt (full-fat for the richest flavor)

  2. 1 English cucumber

  3. 2 cloves of garlic, finely minced

  4. 1-2 tablespoons of lemon juice (adjust to taste)

  5. 2 tablespoons of fresh dill, finely chopped

  6. Salt and pepper to taste

  7. 1-2 tablespoons of extra virgin olive oil



Instructions:

  1. Prepare the cucumber: Start by grating the cucumber. Then, squeeze out as much excess liquid as you can. One way to do this is to put the grated cucumber in a clean kitchen towel and wring out the liquid.

  2. Mix the ingredients: In a medium bowl, combine the Greek yogurt, drained grated cucumber, minced garlic, lemon juice, and chopped dill. Mix until everything is well incorporated.

  3. Season: Add salt and pepper to taste. Adjust the amount of lemon juice if needed.

  4. Chill: Cover the bowl and refrigerate the tzatziki for at least an hour, but ideally overnight to allow the flavors to meld together.

  5. Serve: Drizzle the tzatziki with a bit of olive oil just before serving.


Tzatziki is great as a dip for pita bread or vegetables, as a sauce for grilled meats or gyros, or as a refreshing side dish. Enjoy your homemade tzatziki!
