About Greek Main Courses

Greek main courses are the heart of the family table, often baked slowly in the oven or simmered for hours until everything melts together. The most famous are layered bakes like moussaka, with eggplant, spiced meat sauce, and a golden béchamel crust, and pastitsio, its pasta-based cousin. Meat sauces and stews carry a distinctly Greek warmth from cinnamon, cloves, and allspice, found in stifado, kokkinisto, and youvetsi, where meat and orzo bake together in a clay pot. Lamb holds a special place, whether roasted with lemon potatoes for Sunday lunch or sealed in parchment as kleftiko. Just as important are the ladera, vegetable dishes cooked in generous olive oil, such as gemista, briam, fasolakia, and gigantes, which have long fed Greek families through fasting periods and summer harvests. From the grill come souvlaki and gyros, Greece's favorite street food, and from the coast, dishes like psari plaki, baked fish with tomatoes and onions. Hearty, seasonal, and made for sharing, these are the dishes Greeks gather around.
